My boyfriend came over this weekend and said he was really craving a Reese’s Peanut butter cup (they were both of our favorites). We decided to team up and make this non-paleo dream into a reality. Candy makes everything better right? Let me just say, this was probably the best Paleo treat a gal could ask for. They were so simple to make and they last for a long time, how can you not be obsessed?? They’re delicious, satisfying and packed with healthier fats!

ALMOND BUTTER CUPS

Ingredients
  • 2 CUPS OF ENJOY LIFE CHOCOLATE CHIPS
  • 2 TBSP SMOOTH ALMOND BUTTER
  • 1 TSP HOMEY
  • 1/2 TSP SEA SALT (AND MORE TO SPRINKLE ON TOP
Instructions
  1. MELT THE CHOCOLATE CHIPS SLOWLY ON THE STOVE TOP (I USED A POT WITH BOILING WATER AND THEN A GLASS BOWL THAT FITS SNUGLY ON TOP)
  2. KEEP MIXING THE CHIPS UNTIL MELTED COMPLETELY
  3. LINE A CUPCAKE PAN WITH PAPER LINERS (CAN BE A SMALL PAN OR A LARGE, DEPENDS ON PREFERENCE. I USED A LARGE CUPCAKE PAN, IF YOU ARE USING A SMALLER ONE CUT THE RECIPE IN HALF OR TO YOUR PREFERENCE)
  4. ONCE YOUR CHOCOLATE IS MELTED, SPOON ABOUT 1 HEAPING TABLESPOON OF CHOCOLATE INTO EACH LINER. MAKE SURE YOU HAVE A NICE LAYER OF CHOCOLATE COVERING THE WHOLE BOTTOM. LET THIS REST WHILE YOU MIX UP THE FILLING.
  5. MIX THE ALMOND BUTTER, HONEY AND SALT IN A SMALL BOWL
  6. ONCE COMBINED SCOOP ABOUT A TEASPOON OF THE ALMOND BUTTER MIXTURE AND LIGHTLY PUT IT ON TOP OF THE FIRST LAYER OF CHOCOLATE (REPEAT FOR ALL)
  7. LASTLY, TOP WITH REMAINING MELTED CHOCOLATE AND USE A SPOON TO SMOOTH AND SEAL THE EDGES. SPRINKLE WITH A TOUCH OF SEA SALT (OPTIONAL) AND PUT IN THE FRIDGE OR FREEZER TO SET.
