This is a recipe thats very easy and simple. I think its some of the most flavorful chicken I have ever made. You just throw everything in the Crock-Pot and let all the seasonings mix together. Craving Chipotle or Mexican food? This is even BETTER! One of the things I miss is a big fat burrito…who’s with me? This Chipotle Chicken has the perfect kick and taste to wow any taste buds out there.
Who doesn’t love Crock-pot meals? They are so simple, especially for a student like me. I just threw everything into the pot and totally forgot about it (shhhhh don’t tell!!). I had mine over a nice large salad, trying to stay green! How yummy does this look??? Lets just say, the non Paleo people who had some thought I bought it from the Mexican place down the block!
- 1 lb Chicken Breast
- 1 C Bone Broth
- 1/2 C Trader Joes Salsa Verde Sauce
- 1 Red Pepper
- 1/2 Large Onion
- 1 tbsp Chili Powder
- 1 1/2 tbsp Cumin
- 1 tbsp Paprika
- 2 tsp salt
- 2 tsp Pepper
- 2 tsp Garlic Powder
- 1 tsp Turmeric
- Place all ingredients in crockpot on Medium heat for 4-6 hours.
- Mix a few times an hour.
- Once Chicken is cooked, shred with two forks
- Serve on lettuce, wraps, or tortillas!
