This weather has been inspiring me to cook my favorite comfort meals. I’m all about the parms- Chicken Parm, Meatball Parm, and all the others. Obviously anything “parm” isn’t Paleo. Soooo in true fashion… I made it Paleo! My Meatball Hero “Hot Pockets” are super easy and super yummy! Definitely a family favorite and perfect for any occasion!

Crust

*This makes 2 large pockets

ONCE DONE:

  • Let rolls cool on a rack
  • Once cooled, cut in half (vertically) and scoop out inside to make a pocket
  • Fill pocket with meatballs and sauce
    • For non-paleo people: add some Mozzarella Cheese

Sauce

Ingredients:

  • 3 cloves Garlic minced
  • 1 Large Onion finely chopped
  • 1 tsp crushed pepper
  • 1 tbsp of Italian seasoning (Equal parts of Oregano, Rosemary, Savory, Sage, and Basil)
  • 1 quart Crushed Tomatoes
  • 1 quart Pureed Tomatoes
  • 3 tsp honey

Directions:

  • In a flat skillet with coconut oil add Onion and garlic
  • Once the onions are translucent pour/mix in cans of tomatoes
  • Add in all other ingredients and stir every 5 min
  • Make sure you taste sauce as you go. If you like a sweeter sauce add more honey
  • Keep on low heat
  • Add in Meatballs when they are fully cooked

Meatballs

Ingredients: 

  • 1 Package of Ground Beef
  • 3 Eggs
  • Dash of salt, pepper, and garlic powder (to preferred taste) (I LOVE garlic)
  • 1 1/4 tbsp of Italian seasoning (Equal parts of Oregano, Rosemary, Savory, Sage, and Basil)
  • 1/2 White Onion
  • 1 tbsp crushed garlic

Directions:

  • Preheat oven to 350 degrees
  • In a Magic Bullet Blender/ food processor blend Onion and Garlic together (almost like a paste)
  • Mix all ingredients in a bowl until completely combined
  • On a greased baking sheet (with coconut oil) roll meat into marble sized balls, almost like mini meatballs, place on sheet about 1/2 inch apart
  • Bake at 350 for 12-15min (until cooked through)
  • Place in tomato sauce
  • Let simmer on low for 5-10min
