PUMPKIN CHOCOLATE CHIP COOKIES

Ingredients
  • 2 1/2 cups almond flour
  • ½ C unsweetened coconut
  • 1 egg
  • 1/2 cup + 2 tbsp pumpkin puree
  • 3 tbsp raw honey
  • 2 tbsp coconut oil (melted)
  • 1 tsp pumpkin pie spice
  • 1 tsp Cinnamon
  • Dash of sea salt
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1/3 cup Enjoy Life Chocolate Chips
Instructions
  1. Preheat oven to 350 and place parchment paper on baking sheet
  2. In a bowl combine ingredients, excluding the chocolate chunks
  3. Mix well until dough-like consistency
  4. Roll the dough into small balls and place on lined baking sheet
  5. Flatten lightly into a flat circle (cookie shape)
  6. Bake for 15-20 min
